Place yeast in a glass,
add a dash of flour, a dash of sugar and 1/2 cup lukewarm
water and let rise for 10-15 min.
Using
slow speed and dough hook of a mixer, mix together all ingredients
for ~8 minutes.
Add small quantity of flour or water, if needed.
Divide into 2 balls, refrigirate
for 2 hours or over night.
Whip egg whites with 1 cup sugar, when stif, add cocoa powder.
Roll
each ball and spread eggwhite on it, roll up.
Cut
to ~2" pieces and place in a well oiled round pan.
Bake at 350 for ~50 min.
