5 lbs potatoes, peeled & quartered
2 tsp salt (optional)
2 pkg (3 oz each) cream cheese (with chives, if possible) cubed
4 tbsp butter
1/2 tsp garlic powder
1/4 tsp pepper
2 cups heavy cream
2 tbsp butter
paprika
Cook potatoes with 1 tsp salt until tender, and drain and then mash until potatoes are smooth. Add cream cheese, 4 tbsp butter, garlic powder, salt & pepper.
Gradually add heavy cream, mix until smooth.
Put in 13 x 9 x 2 greased casserole.
Dot potatoes with the 2 remaining tbsp of butter & paprika.
Bake @ 325 degrees for 30 min, then at 375 degrees for 30 - 40 min.
You don't have to bake this right away, you can just cover it with foil, regrigerate overnight and bake the next day.
