Seasoning
mix:
Brown onions in olive oil for 1-2 minutes.
Add rest of the ingredients.
Cook while stirring another 3-4 minutes.
(freezes very well, you may prepare a large quantity ahead.).
Rice:
Place rice, water, salt and margarine in a pan, bring
to boil. Reduce heat, cook for ~15 minutes. Add about
1/2 cup of the seasoning mixture and cook together until
rice is done, 5-10 minutes longer.
